Chipotle Guacamole



Chipotle Guacamole

6  ripe Hass avocados

1 chopped onion,

1 chopped tomato,

1 tablespoon Meyer lemon juice (a regular lemon will do)

3 chipotle peppers, canned (fresh if your brave enough)

Garlic salt

Chopped cilantro

 

Remove avocado flesh from the skin, cut it into small pieces and put in a mixing bowl.

Using a fork, stir in ½ chopped onion, chopped tomato, half of the cilantro and Meyer lemon juice. Put aside.

Using a blender, mix the chopped jalapeños and chipotle peppers, the remaining onion, cilantro. Add garlic salt to taste.

Pour the chili sauce into the avocado mixture and combine.

Makes 6-8 servings.
